Ingredients
- 2 cups digestive cookies or graham crackers
- ½ cup butter (melted)
- 3 cups fresh apple cider
- 3 bricks cream cheese (softened)
- 1 cup brown sugar
- 1 cup sour cream
- 3 large eggs

Instructions
- Boil apple cider and mulling spices in a pot until reduced to 1/3 cup; set aside to cool.
- Preheat the oven to 350°F.
- Mix cookie crumbs, melted butter, salt, and powdered sugar in a food processor; press into an 8” springform pan and bake for 10 minutes.
- Lower oven temperature to 325°F.
- Beat cream cheese and brown sugar until smooth; add sour cream, vanilla, salt, cinnamon, and the cooled reduced cider.
- Add eggs one at a time followed by flour; mix just until combined.
- Pour filling into cooled crust; bake in a water bath for about 90 minutes until edges are set.
- Cool gradually in the oven before refrigerating for at least 8 hours.
