  • 4 tablespoons cold unsalted butter
  • 2 large eggs
  • 1/3 cup granulated sugar
  • ½ cup brown sugar
  • 1/3 cup light olive oil
  • ¼ cup sour cream
  • 1¾ cups all-purpose flour
  • Spices: ground cinnamon, allspice, baking powder, baking soda
  • Topping: butter, granulated sugar, ground cinnamon

Instructions

  1. Preheat oven to 350°F and prepare a greased 9” square baking dish lined with parchment paper.
  2. In a sauté pan, reduce apple cider by half (about 5 minutes), then whisk in diced butter until melted.
  3. In a bowl, whisk eggs, sugars, oil, sour cream, and dry ingredients until combined; add the cider mixture.
  4. Gently fold in flour until just mixed.
