  • 24 ounces full-fat cream cheese (room temperature)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon cornstarch (or 2 tablespoons all-purpose flour)
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream (room temperature)
  • 3 large eggs (room temperature)
  • boiling water (for the water bath)
  • salted caramel sauce

Instructions

  1. Preheat the oven to 350°F (180°C). Prepare a 9-inch springform pan by wrapping it in foil and greasing lightly.
  2. Combine graham cracker crumbs, brown sugar, cinnamon, and melted butter in a bowl. Press firmly into the bottom of the prepared pan.
  3. Peel and slice apples, mixing them with brown sugar and cinnamon; layer evenly over the crust.
  4. Beat cream cheese until smooth, then add sugars, eggs, sour cream, cornstarch, and vanilla; blend well. Pour over apple layer.
  5. Prepare crumble topping using flour, oats, brown sugar, cinnamon, and melted butter; sprinkle over cheesecake filling.
  6. Bake in a water bath for 60-70 minutes until set. Allow to cool before refrigerating for several hours.
