Ingredients

Scale
  • 1 lb ground beef
  • ¼ cup maple syrup (or brown sugar)
  • ¼ cup coconut aminos (or soy sauce)
  • 2 cloves garlic (minced)
  • 2 tsp grated ginger
  • Boston Bibb lettuce leaves
  • 1 medium red bell pepper (finely diced)
  • ½ cup shredded carrots
  • Olive oil

Instructions

  1. Make the sauce by whisking together maple syrup, coconut aminos, rice vinegar, sesame oil, and red pepper flakes in a measuring cup. Add arrowroot powder and mix well.
  2. Heat olive oil in a skillet over medium-high heat. Add ground beef; cook until no longer pink (about 5 minutes).
  3. Stir in minced garlic and grated ginger; cook for another 1-2 minutes until fragrant.
  4. Add finely diced bell pepper and shredded carrots; cook until tender (about 3-4 minutes).
  5. Pour the prepared sauce into the skillet; stir to combine and simmer for about 2-3 minutes until thickened. Season with salt and pepper to taste.
  6. Serve the filling in Boston Bibb lettuce leaves, garnishing with sesame seeds if desired.
