  • ¼ cup fresh cilantro, chopped
  • 1 lime, juiced
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup fresh salsa (store-bought or homemade)
  • Optional: 2 cups mixed greens for serving

Instructions

  1. In a skillet over medium heat, add olive oil. Once hot, cook the shrimp seasoned with garlic powder, salt, and pepper for about 3-4 minutes per side until pink and opaque. Remove from heat.
  2. While the shrimp cooks, chop the vegetables and combine them in a large mixing bowl.
