  • 2 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened for frosting
  • 3 cups powdered sugar
  • 1 teaspoon vanilla extract for frosting

Instructions

  1. Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In one bowl, mix dry ingredients: flour, baking powder, baking soda, and salt.
  3. In another bowl, cream together softened butter and sugar until fluffy. Add eggs one at a time, then stir in vanilla.
  4. Alternate adding the dry mixture and buttermilk to the creamed mixture, finishing with the dry ingredients. Fold in mashed bananas.
  5. Pour batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out clean.
  6. While cooling, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla until creamy.
  7. Once cooled, frost the cake evenly with the cream cheese frosting.
