- 3 ripe bananas
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup buttermilk
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened for frosting
- 3 cups powdered sugar
- 1 teaspoon vanilla extract for frosting
Instructions
- Preheat oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In one bowl, mix dry ingredients: flour, baking powder, baking soda, and salt.
- In another bowl, cream together softened butter and sugar until fluffy. Add eggs one at a time, then stir in vanilla.
- Alternate adding the dry mixture and buttermilk to the creamed mixture, finishing with the dry ingredients. Fold in mashed bananas.
- Pour batter into the prepared pan and bake for 25-30 minutes or until a toothpick comes out clean.
- While cooling, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla until creamy.
- Once cooled, frost the cake evenly with the cream cheese frosting.
