  • 1/2 cup cold unsalted butter, cubed
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 cup creamy peanut butter
  • 1 large egg
  • 1 large egg yolk
  • 1 tsp vanilla extract
  • 1 Tbsp milk (optional)
  • 1 (10 oz) bag peanut butter chips
  • 1/4 cup granulated sugar
  • flaky sea salt (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and line two cookie sheets with parchment paper.
  2. In a bowl, whisk together all-purpose flour, cake flour, cornstarch, baking soda, baking powder, and salt.
  3. In a stand mixer, cream together butter, brown sugar, granulated sugar, and peanut butter until smooth.
  4. Add egg, egg yolk, and vanilla; mix until incorporated.
  5. Gradually add dry ingredients while mixing on low speed until combined. Fold in peanut butter chips.
  6. Scoop dough into balls and place them on prepared sheets. Bake for 9–11 minutes until golden brown.
  7. Cool slightly before transferring to a wire rack.
