  • 4 cups rhubarb (cut into 1/2" chunks)
  • 3/4 cup granulated sugar
  • 1/4 cup all-purpose flour
  • 1 tsp cinnamon
  • 1 cup all-purpose flour (for topping)
  • 1/2 cup rolled oats
  • 1/2 cup packed brown sugar
  • 1/2 cup unsalted butter (melted)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine rhubarb, granulated sugar, flour, and cinnamon until well mixed. Transfer to an 8×8" baking dish.
  3. In another bowl, mix together the flour, oats, brown sugar, and melted butter until crumbly. Sprinkle evenly over the rhubarb filling.
  4. Bake for 40-45 minutes or until the top is golden brown and bubbling around the edges.
  5. Allow to cool slightly before serving warm or cold.
