  • 1/2 pound ground breakfast sausage
  • 6 large eggs (beaten)
  • 8 slices Colby-Jack cheese
  • 4 tablespoons soft butter (divided)
  • 8 slices sourdough bread

Instructions

  1. In a large non-stick skillet, cook and crumble the ground breakfast sausage until no longer pink. Transfer to a paper towel-lined bowl and set aside.
  2. In the same skillet, melt 2 tablespoons of butter over medium-high heat. Add the beaten eggs and scramble until nearly cooked through.
  3. Combine the cooked sausage and scrambled eggs in the bowl.
  4. Butter one side of each slice of sourdough bread. In the skillet, assemble the sandwich with cheese, egg-sausage mixture, and additional cheese.
  5. Grill each sandwich until golden brown on both sides (about 3-4 minutes per side). Cut in half if desired and serve immediately.
