Ingredients

  • 1 cup chopped white onions
  • 1 clove diced garlic
  • 3 cups finely chopped broccoli
  • 1.5 cups julienned carrots
  • 1/4 cup vegan butter
  • 4 cups plain, unsweetened rice milk
  • 1 cup vegan cheddar cheese
  • 1/2 cup all-purpose flour
  • 3 cups vegetable broth
  • Salt & pepper to taste

Instructions

  1. Melt vegan butter in a large pot over medium heat.
  2. Sauté chopped onions and garlic until soft (5-7 minutes).
  3. Stir in flour to create a roux.
  4. Gradually whisk in vegetable broth and rice milk until smooth.
  5. Bring to a boil, then lower heat and add broccoli and carrots; cook for 10 minutes until tender.
  6. Stir in vegan cheese until melted.
  7. Blend part of the soup for creaminess, then return it to the pot.
  8. Season with salt and pepper, serve hot.
