- 1–3 tbsp Cajun seasoning
- 1 tsp salt
- 1 tbsp olive oil
- ½ tbsp butter
- 1 large onion, finely diced
- 2 cloves garlic, minced
- 2 tbsp chopped sun-dried tomatoes
- 1 tbsp tomato paste
- 1 cup orzo pasta
- 1 cup chicken broth
- 1 cup shredded spinach
- ¼ cup heavy cream
- 3 tbsp grated Parmesan cheese
Instructions
- Season the chicken with Cajun seasoning and salt. Heat butter and oil in a large pan, then pan-fry the chicken until it starts to brown.
- Add onion, garlic, sun-dried tomatoes, and tomato paste to the pan. Cook for about five minutes over low heat while stirring frequently.
- Stir in orzo for one minute before adding chicken broth. Bring to a simmer, cover the pan, and cook for about 20 minutes until the orzo is tender.
- Uncover and stir in shredded spinach until wilted.
- Mix in heavy cream and Parmesan cheese to create a rich sauce before serving.
