  • 2 tbsp olive oil
  • Tahini sauce (1/3 cup tahini, 1 tbsp garlic powder, juice of 1 lemon)

Instructions

  2. Preheat the oven to 415°F. Toss sweet potatoes with olive oil and Cajun seasoning on a parchment-lined baking sheet. Season with salt and pepper and roast for about 20 minutes until tender.
  3. In a skillet, heat oil over medium heat. Sauté onions and bell peppers until soft, then stir in black beans until heated through.
  4. Assemble your bowl: Start with rice, add roasted sweet potatoes and black beans, top with avocado if desired, and drizzle with tahini sauce.
