  • 2 cups cherry tomatoes
  • 1 tablespoon olive oil
  • 2 tablespoons basil pesto
  • 5 cloves garlic (minced)
  • 1 cup sour cream
  • ½ cup fresh chopped basil
  • 8 ounces fresh mozzarella (chunked)
  • 8 ounces shredded provolone cheese
  • ¼ cup grated parmesan cheese

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a baking dish, combine whole cherry tomatoes, olive oil, pesto, garlic, salt, and pepper. Toss to coat and roast for 15 minutes.
  3. In a mixing bowl, combine sour cream and chopped basil; add mozzarella, provolone, and parmesan. Mix well.
  4. Add cheese mixture to roasted tomatoes and gently toss together; top with halved cherry tomatoes.
  5. Bake for another 20 minutes until bubbly and golden. Garnish with fresh basil before serving.
