  • 1 tablespoon olive oil
  • 1 pound ribeye steak, thinly sliced
  • 1 medium onion, sliced
  • 1 bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup beef broth
  • 1/2 cup heavy cream
  • 1 cup provolone cheese, shredded
  • 1/4 cup Parmesan cheese, grated
  • Fresh parsley for garnish

Instructions

  1. Boil the tortellini in salted water until al dente (3-5 minutes). Drain and set aside.
  2. In a skillet, heat olive oil over medium-high heat. Cook the ribeye steak for 3-4 minutes until browned. Remove and set aside.
  3. Sauté onions and bell peppers in the same skillet for about 5-6 minutes until softened. Add garlic and cook for another minute.
  4. Season vegetables with salt and pepper. Pour in beef broth and simmer for 2-3 minutes to reduce slightly.
  5. Lower heat and stir in heavy cream until thickened (about 2-3 minutes). Add provolone and Parmesan cheese until melted.
  6. Return steak to the skillet; mix well with sauce. Toss in drained tortellini until coated.
