  • 1 large egg yolk, room temperature
  • 1/2 cup canned pumpkin, blotted
  • 2 tsp vanilla extract
  • 1/2 tsp maple extract, optional
  • 1/2 cup granulated sugar for coating
  • 1/2 tsp pumpkin or chai spice blend for coating

Instructions

  1. Brown the butter in a saucepan until golden brown, then let it cool.
  2. Blot excess moisture from canned pumpkin.
  3. Whisk together dry ingredients: flour, spice blend, baking soda, and salt.
  4. In a bowl, mix cooled butter with brown sugar and maple syrup until smooth. Add egg yolk and combine well.
  5. Stir in pumpkin puree and extracts until mixed.
  6. Gradually add dry mixture to wet ingredients; mix until just combined.
  7. Cover dough and chill for at least 8 hours.
  8. Preheat oven to 350°F (177°C) and line baking sheets with parchment paper.
  9. Roll chilled dough in spiced sugar mixture and place on baking sheets.
