  • 2 tablespoons olive oil or 1/4 cup water/broth
  • 1 large onion, diced
  • 34 garlic cloves, minced
  • 2-inch piece of ginger, minced
  • 2 cans (14oz) chickpeas, drained and rinsed
  • 2 cans (14oz) diced tomatoes with juices
  • 1 can (15oz) coconut milk
  • 1 teaspoon cumin seeds
  • 1 1/2 teaspoons turmeric
  • 1 heaping teaspoon garam masala
  • 1/2 teaspoon cayenne pepper
  • 1/2 teaspoon mineral salt

Instructions

  1. In a large pot, heat olive oil or water over medium heat. Sauté diced onions and cumin seeds until onions are browned.
  2. Stir in minced ginger and garlic; cook until fragrant.
  3. Add turmeric, garam masala, cayenne pepper, and salt. Cook briefly until aromatic.
  4. Incorporate diced tomatoes and their juices into the pot. Cook until slightly broken down.
  5. Mix in tomato paste, chickpeas, and coconut milk; stir well.
  6. Simmer on low heat for 25-30 minutes, stirring occasionally.
  7. Serve hot over rice or quinoa with fresh cilantro garnish.
