  • 100 grams granulated sugar
  • 100 grams almond flour
  • 100 grams powdered sugar
  • 2 tablespoons unsweetened cocoa powder
  • 1/4 cup butter
  • 1/3 cup peanut butter
  • 1 cup powdered sugar (for filling)
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 300°F (150°C). Line baking sheets with parchment paper.
  2. Prepare Swiss meringue by heating egg whites and granulated sugar over a double boiler until sugar dissolves. Whip until stiff peaks form.
  3. Sift almond flour, cocoa powder, and powdered sugar together; fold gently into the meringue.
  4. Pipe batter into circles on prepared sheets and bake for 13 minutes.
  5. For the filling, beat together butter, peanut butter, powdered sugar, vanilla extract, and salt until fluffy.
  6. Once shells cool, pipe the filling onto half and sandwich with another shell.
