  • 3 ripe bananas
  • 4 tbsp melted vegan butter
  • 3/4 cup maple syrup
  • 1 cup almond or oat milk
  • 1 1/2 cups all-purpose flour (regular or gluten-free)
  • 2 tbsp cinnamon
  • 1/3 cup light brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix mashed bananas, melted vegan butter, maple syrup, almond or oat milk, and vanilla extract until smooth.
  3. In another bowl, combine flour, baking powder, baking soda, cinnamon, salt, and rolled oats.
  4. Gradually fold the dry ingredients into the wet mixture until just combined.
  5. Prepare the cinnamon swirl by mixing melted vegan butter, brown sugar, and additional cinnamon.
  6. Pour half of the batter into a greased loaf pan; drizzle with half the swirl mixture. Add remaining batter and swirl again.
  7. Bake for about 45 minutes or until a toothpick comes out clean.
  8. Cool in the pan for 10 minutes before transferring to a wire rack; drizzle with powdered sugar glaze if desired.
