- 5 strips bacon
- 3 1/2 lbs beef chuck
- 4 tablespoons unsalted butter
- 1 yellow onion
- 3 large carrots
- 5 garlic cloves
- 2 cups Burgundy wine
- 2 cups beef stock
- fresh thyme and bay leaves
Instructions
- Preheat oven to 350°F (175°C).
- Cook bacon in a Dutch oven over medium-low heat until browned; remove and set aside.
- Season beef with salt and pepper, then sear in the same pot until browned on all sides; remove.
- Sauté onions and carrots in remaining fat, add garlic, then stir in tomato paste and flour.
- Pour in wine, scraping the pot's bottom; add stock, bouillon, thyme, and bay leaves.
- Return beef and bacon to the pot; cover and bake for about 2.5 hours.
- In the last half hour, sauté mushrooms and pearl onions separately; combine them into the stew before serving.
