  • 1/2 cup sugar (for streusel topping)
  • 1/3 cup cake flour (for streusel topping)
  • 1/2 tsp cinnamon (for streusel topping)
  • 4 tbsp cold butter (cubed, for streusel topping)

Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×9 baking dish.
  2. Whisk together cake flour, baking powder, and salt in one bowl.
  3. In another bowl, cream together butter and sugar until fluffy; add egg and vanilla.
  4. Alternately mix dry ingredients and milk until just combined.
  5. Gently fold in blueberries.
  6. Spread batter into the prepared dish.
  7. For streusel topping, mix sugar, flour, cinnamon, and cold butter until crumbly; sprinkle over batter.
  8. Bake for 35–40 minutes or until a toothpick comes out clean.
  9. Cool for at least 10 minutes before serving.
