- 1 pound salmon fillets (or any preferred fish)
- ⅓ cup olive oil
- 1 red bell pepper, sliced
- 1 serrano pepper (or 2 jalapenos), sliced
- ½ cup chopped cilantro
- 2 carrots, cut into strips
- 1 russet potato, sliced (optional)
- 6 garlic cloves, halved
- 1 tablespoon tomato paste
- 1 tablespoon sweet paprika
- ½ tablespoon hot paprika
- 1 teaspoon coarse salt
- ½ teaspoon cumin
- ¼ teaspoon turmeric
Instructions
- Heat olive oil in a large sauté pan over medium heat. Add bell pepper, serrano pepper, carrots, garlic, and potatoes (if using). Sauté for 2-3 minutes.
- Stir in the tomato paste and spices; cook for another 2-3 minutes.
- Add half of the cilantro and about ¾ cup water. Cover and simmer for 12-15 minutes until vegetables are tender.
- Season salmon fillets with salt, then nestle them into the pan. Spoon sauce over fish and cover. Simmer on low for 20-25 minutes.
