Ingredients

  • 1 cup cottage cheese
  • 2 large eggs
  • 1½ cups almond flour
  • 1 teaspoon baking powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. In a mixing bowl, whisk together cottage cheese and eggs until smooth.
  2. Stir in almond flour, baking powder, garlic powder, onion powder, salt, and pepper until you have a thick batter.
  3. Preheat a non-stick skillet over medium heat and lightly coat with olive oil.
  4. Scoop about ¼ cup of the batter onto the skillet and spread it into a round shape.
  5. Cook for 3-4 minutes on one side until golden brown; flip carefully and cook for another 3-4 minutes.
  6. Repeat with remaining batter, adding more olive oil as needed.
