  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup mini chocolate chips (or regular)

Instructions

  1. Preheat your oven to 350°F and line a muffin tin with liners.
  2. In a blender, combine cottage cheese, maple syrup, vanilla extract, pumpkin puree (for the pumpkin variation) or applesauce (for the regular version), and eggs; blend until smooth.
  3. In a mixing bowl, whisk together flour, baking powder, pumpkin spice (if using), and salt.
  4. Pour the blended wet ingredients into the dry mix and stir gently until combined.
  5. Fold in chocolate chips.
  6. Fill muffin liners about two-thirds full with batter.
