  • 1 lb ground beef (80/20)
  • 2 cups heavy cream
  • 1 cup beef broth
  • 1 cup grated Parmesan cheese

  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 2 tbsp tomato paste
  • 1 tsp Italian seasoning
  • ½ tsp red pepper flakes (optional)
  • Salt and black pepper to taste

Instructions

  1. Cook rigatoni in a large pot of salted boiling water until al dente; reserve 1 cup of pasta water before draining.
  2. In a skillet, heat olive oil over medium heat; sauté onion until softened. Add garlic and cook until fragrant.
  3. Brown the ground beef in the skillet, breaking it apart until fully cooked. Drain excess grease.
  4. Stir in tomato paste, Italian seasoning, red pepper flakes (if using), salt, and pepper; cook for a few minutes.
  5. Pour in beef broth and heavy cream; simmer to thicken.
  6. Gradually mix in Parmesan cheese until melted, then add mozzarella cheese for extra creaminess.
  7. Combine cooked rigatoni with the sauce; use reserved pasta water to adjust consistency as needed.
