  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 12 ounces penne pasta
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Place chicken in the crock pot and sprinkle with Cajun seasoning.
  2. Add chicken broth, minced garlic, chopped onion, and sliced bell peppers. Stir to combine.
  3. Cover and cook on low for 6 hours or high for 3-4 hours until chicken is tender.
  4. Shred the chicken using two forks and return it to the pot.
  5. Stir in heavy cream, Parmesan cheese, and uncooked penne pasta.
  6. Cover and cook on high for an additional 30 minutes or until pasta is tender.
  7. Season with salt and pepper to taste and serve garnished with fresh parsley.
