- 1 teaspoon baking powder
- 1 teaspoon baking soda

- 2 eggs
- 1 cup pumpkin puree
- 1/4 cup honey
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 375°F (190°C) and grease a muffin tin.
- In a large bowl, whisk together rolled oats, protein powder, baking powder, baking soda, cinnamon, ginger, and nutmeg.
- In another bowl, beat the eggs and mix in pumpkin puree, honey, and vanilla extract.
- Fold the dry ingredients into the wet mixture until just combined.
- Scoop batter into muffin tins and bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool for 5 minutes in the tin before transferring to a wire rack.
