  • 1 kg fresh Roma tomatoes, quartered
  • 1 large onion, diced
  • 3 garlic cloves, minced
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 liter chicken or vegetable broth
  • 240 ml heavy cream (optional)
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat oven to 200°C (400°F).
  2. On a baking sheet, toss quartered tomatoes with olive oil, salt, pepper, and smoked paprika.
  3. Roast for 30-35 minutes until caramelized.
  4. In a large pot over medium heat, sauté diced onions until translucent (about 5 minutes), then add minced garlic for another minute.
  5. Add roasted tomatoes and broth to the pot; stir well and bring to a simmer.
  6. Blend until smooth using an immersion blender or regular blender.
  7. Taste and adjust seasoning; serve hot garnished with basil.
