  • 2 servings dry instant ramen noodle cakes (about 140 g)
  • 10 oz extra firm tofu or veggies/mushrooms (sliced)
  • 1 cup water or vegetable broth
  • 57 tbsp soy sauce
  • 1.5 tsp dark soy sauce (optional)
  • 23 tbsp corn starch
  • 23 tbsp sugar (or maple syrup)
  • 2 tbsp rice vinegar
  • 1/4 tsp ground pepper
  • 1/2 tbsp chili garlic sauce
  • 1 tbsp sesame oil
  • Optional: chopped scallions and sesame seeds for garnish

Instructions

  1. Mix all sauce ingredients in a bowl until well combined; set aside.
  2. Boil water in a pot, then add ramen noodles and cook until al dente (about 2–3 minutes less than package instructions).
  3. Drain noodles and rinse under cold water to stop cooking.
  4. In a pan over medium-high heat, sauté sliced veggies or tofu until cooked through.
  5. Pour the prepared sauce over the sautéed ingredients; simmer for about 2–3 minutes until thickened.
  6. Add drained noodles to the pan; mix well to coat noodles evenly in the sauce.
  7. Cook for an additional 3 minutes over medium-high heat until noodles absorb some sauce.
  8. Adjust seasoning if needed before serving, garnished with scallions and sesame seeds.
