  • 2 tablespoons cocoa powder
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 225 g dark chocolate (chopped)
  • 56 g butter
  • 2 eggs
  • 100 g caster sugar
  • 90 g Demerara sugar
  • 1 teaspoon vanilla extract
  • 85 g chocolate chips

Instructions

  1. Preheat your oven to 160ºC (320ºF) for fan ovens, or 170ºC (338ºF) for conventional.
  2. Melt the chopped dark chocolate and butter in a heatproof bowl over simmering water; stir until smooth and mix in vanilla.
  3. In another bowl, whisk together eggs and sugars until light and fluffy.
  4. Combine dry ingredients (flour, cocoa, baking powder, salt) in another bowl; add chocolate chips.
  5. Gently fold the melted chocolate mixture into the egg mixture.
  6. Carefully incorporate the dry ingredients until just combined.
  7. Scoop onto a lined baking tray and bake for 12-14 minutes until set.
  8. Cool on the tray for about 10 minutes before transferring to a rack.
