  • 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
  • 3 tbsp unsalted butter
  • 4 cloves garlic (minced)
  • 1 cup heavy cream
  • ¾ cup freshly grated Parmesan cheese
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • ½ tsp salt (or to taste)
  • ½ tsp black pepper
  • ¼ tsp red pepper flakes (optional)
  • 2 tbsp chopped fresh parsley (for garnish)

Instructions

  1. Cook rigatoni according to package instructions until al dente. Reserve ½ cup of pasta water, drain, and set aside.
  2. In a skillet, heat olive oil over medium-high heat. Season chicken with salt and pepper; cook until golden brown, about 5-7 minutes. Remove from skillet.
  3. In the same skillet, melt butter and sauté minced garlic until fragrant. Add chicken broth and simmer for 2 minutes.
  4. Stir in heavy cream; let simmer until slightly thickened (3-4 minutes). Mix in Parmesan cheese until smooth; adjust thickness with reserved pasta water as needed.
  5. Combine cooked chicken and rigatoni in the sauce; toss to coat thoroughly. Simmer for an additional minute before serving.
  6. Garnish with parsley and extra Parmesan if desired.
