  • 1 teaspoon Coconut Oil
  • 3/4 cup Plain Greek Yogurt
  • 1 large Egg
  • 1/4 cup Almond Milk (or milk of choice)
  • 1/2 cup Granulated Sweetener (sugar-free or regular)
  • 1 teaspoon Vanilla Extract
  • 1/2 cup Oat Flour (or all-purpose flour)
  • 1/2 cup Unsweetened Cocoa Powder
  • 1 teaspoon Baking Powder
  • 1/4 teaspoon Salt

Instructions

  1. Preheat the oven to 350°F (180°C) and prepare an 8-inch x 8-inch brownie pan by lining it with parchment paper.
  2. Melt 1/3 cup of chocolate chips and coconut oil in a microwave-safe bowl. Let cool slightly.
  3. In a mixing bowl, combine oat flour, cocoa powder, sweetener, baking powder, and salt.
  4. In another bowl, whisk together Greek yogurt, egg, vanilla extract, almond milk, and the melted chocolate mixture.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined. Stir in the remaining chocolate chips.
  6. Pour batter into the prepared pan and bake for about 20-23 minutes or until a toothpick comes out clean.
