  • 1/4 cup all-purpose flour
  • 4 cups low-sodium chicken or vegetable broth
  • 2 cups sharp cheddar cheese
  • 2 cups whole milk (or half-and-half)
  • Fresh herbs (parsley, chives, thyme)

Instructions

  1. Peel and cube potatoes into ½-inch pieces; rinse under cold water.
  2. In a large pot, melt butter over medium heat. Sauté chopped onion until softened.
  3. Add minced garlic; cook until fragrant.
  4. Sprinkle flour into the pot; stir for 1-2 minutes to create a roux.
  5. Gradually whisk in broth; bring to a simmer.
  6. Add potatoes; cover and cook until tender (15–20 minutes).
  7. Blend half of the soup until smooth; return to pot.
  8. Stir in milk and herbs; gently heat through.
  9. Remove from heat and gradually mix in cheddar cheese until melted.
