Instructions

  1. Preheat oven to 375°F (190°C) and grease an 8-inch baking dish or cast-iron skillet.
  2. Cook and mash sweet potatoes; let them cool slightly.
  3. In one bowl, mix cornmeal, flour, sugar, baking powder, and salt. In another bowl, combine mashed sweet potatoes, buttermilk, melted butter, eggs, and honey.
  4. Combine wet ingredients into dry ingredients; stir until just mixed.
  5. Pour batter into the prepared dish and bake for 25-30 minutes until a toothpick comes out clean.
  6. For honey butter: beat softened butter with honey until smooth.
  7. Cool slightly before serving with honey butter.
