  • 1/2 cup honey
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1 cup feta cheese, crumbled
  • Fresh parsley for garnish
  • Lemon slices for serving

Instructions

  1. In a medium bowl, whisk together honey, olive oil, red wine vinegar, garlic, oregano, red pepper flakes, salt, and pepper.
  2. Place chicken in a resealable bag or shallow dish. Pour marinade over chicken and refrigerate for at least 30 minutes (preferably 2 to 4 hours).
  3. Preheat oven to 400°F (200°C). Remove chicken from marinade and discard the marinade.
  4. Place chicken in a baking dish and top with crumbled feta.
  5. Bake for 25 to 30 minutes until chicken is cooked through (internal temperature of 165°F) and feta is golden.
