Ingredients

  • 4 cups water
  • 2 tbsp Kashmiri/Himalayan green tea
  • 1/2 tsp baking soda
  • 12 star anise
  • 2 crushed cardamom pods
  • 1 cinnamon stick
  • 1/4 tsp salt
  • 2 cups whole milk
  • Sugar or honey to taste
  • Crushed nuts for garnish (optional)

Instructions

  1. Bring water to a boil in a saucepan; add green tea and boil for 5 minutes.
  2. Stir in baking soda, boiling for an additional 2 minutes until the water turns deep red.
  3. Add star anise, cardamom pods, and cinnamon stick; boil for another minute.
  4. Reduce heat and simmer the mixture for 20–30 minutes until it reduces by half.
  5. Stir in salt and mix well; then add milk and bring it to a boil while stirring constantly.
  6. Strain the chai into cups to remove spices and tea leaves.
  7. Sweeten with sugar or honey as desired; garnish with crushed nuts if using.
  8. Serve hot and enjoy!
