Ingredients
- 4 cups water
- 2 tbsp Kashmiri/Himalayan green tea
- 1/2 tsp baking soda
- 1–2 star anise
- 2 crushed cardamom pods
- 1 cinnamon stick
- 1/4 tsp salt
- 2 cups whole milk
- Sugar or honey to taste
- Crushed nuts for garnish (optional)
Instructions
- Bring water to a boil in a saucepan; add green tea and boil for 5 minutes.
- Stir in baking soda, boiling for an additional 2 minutes until the water turns deep red.
- Add star anise, cardamom pods, and cinnamon stick; boil for another minute.
- Reduce heat and simmer the mixture for 20–30 minutes until it reduces by half.
- Stir in salt and mix well; then add milk and bring it to a boil while stirring constantly.
- Strain the chai into cups to remove spices and tea leaves.
- Sweeten with sugar or honey as desired; garnish with crushed nuts if using.
- Serve hot and enjoy!
