  • 5 medium red beets
  • 2 teaspoons orange zest
  • ½ cup fresh orange juice
  • 1 tablespoon extra-virgin olive oil
  • 1½ teaspoons ground cumin
  • 1 teaspoon kosher salt
  • ½ small red onion
  • ¼ cup fresh mint leaves
  • ¼ cup minced fresh cilantro leaves

Instructions

  1. Preheat your oven to 400°F.
  2. Wrap each beet in aluminum foil and place them on a baking sheet. Roast for 40-50 minutes until tender.
  3. Once cooled, peel the beets and cut them into 2-inch pieces.
  4. In a large bowl, whisk together orange zest, orange juice, olive oil, cumin, and salt.
  5. Add roasted beets, red onion, mint, and cilantro to the bowl. Toss gently until well coated.
  6. Serve chilled or at room temperature with flaky salt if desired.
