- 2 1/2 cups unsalted butter (room temperature)
- 4 cups powdered sugar
- 2 tbsp heavy cream
- 2 tsp vanilla extract
- 1 tsp vanilla bean paste
- 1 cup white chocolate chips
- 1/4 cup + 3 tbsp heavy cream

Instructions
- Preheat your oven to 350°F (180°C) and prepare three 8-inch cake pans with parchment paper.
- Cook quick oats in boiling water until soft. Let cool.
- Whisk together dry ingredients: flour, baking soda, salt, cinnamon, and nutmeg.
- In a stand mixer, cream together butter and sugars until fluffy. Add eggs, sour cream, and cooled oats until combined.
- Gradually fold in dry ingredients until no flour remains.
- Divide batter among pans and bake for 20–22 minutes or until a toothpick comes out clean.
- Cool layers before assembling with frosting made from butter, powdered sugar, heavy cream, and vanilla.
