Ingredients

  • 2 cups Heavy Cream
  • 1/2 cup Unsalted Butter
  • 6 cups Sugar (divided)
  • 1 1/2 cups Chopped Walnuts or Pecans
  • 1 teaspoon Vanilla Extract
  • 1/4 teaspoon Baking Soda

Instructions

  1. Lightly grease a 9×13-inch baking dish and set aside.
  2. In a heavy-bottomed saucepan, melt 2 cups of sugar over low heat while stirring frequently until liquefied (about 20 minutes).
  3. In a large saucepan, combine the remaining 4 cups of sugar with heavy cream and simmer over low heat.
  4. Once the initial sugar melts, pour it into the cream mixture while stirring continuously.
  5. Increase heat to medium until the mixture reaches 244°F (softball stage).
  6. Remove from heat and stir in baking soda until fully blended.
  7. Add unsalted butter and vanilla extract; stir until melted and smooth.
  8. Let cool for about 20 minutes before stirring in chopped nuts until no glossy sheen remains; transfer to prepared dish.
  9. Allow to cool for 1-2 hours before slicing into squares.
