Ingredients

  • 4 skinless boneless chicken thighs
  • 2 tbsp chipotle paste
  • 2 tbsp runny honey
  • 1 1/2 tsp tomato puree
  • 1 tsp salt
  • 2 large garlic cloves
  • 200g fresh pineapple chunks
  • 8 small corn or flour tortillas
  • 1 small shallot
  • Juice of 1 lime, plus extra wedges for serving
  • Small handful fresh coriander, roughly chopped
  • 1 ripe avocado, cubed

Instructions

  1. Preheat the oven to 200°C (400°F).
  2. In a medium bowl, whisk together chipotle paste, honey, tomato puree, salt, and minced garlic.
  3. Cut chicken into bite-sized pieces and toss in the marinade until well coated.
  4. Spread marinated chicken and pineapple chunks on a baking tray and roast for about 30 minutes or until cooked through.
  5. While roasting, prepare shallot and avocado. Lightly char tortillas if desired.
  6. Once cooked, squeeze lime juice over the mixture and toss with shallots before serving.
