  • 16 baby yellow potatoes
  • ½ stick (4 tablespoons) melted unsalted butter
  • 1.5 teaspoons garlic powder
  • 1 tablespoon Italian seasoning
  • 1 teaspoon salt (to taste)
  • ½ cup grated Parmesan cheese
  • ½ cup plain yogurt
  • 1 teaspoon olive oil
  • fresh dill (finely chopped, or dry dill) to taste

Instructions

  1. Boil the baby potatoes in a large pot of water for about 15-20 minutes until fully tender.
  2. Preheat your oven to 400°F (200°C) and line a sheet pan with parchment paper.
  3. In a mixing bowl, combine melted butter, Parmesan cheese, garlic powder, Italian seasoning, and salt.
  4. Transfer boiled potatoes to the baking sheet and gently smash each potato using a glass.
  5. Coat each smashed potato with the butter mixture and bake for approximately 30 minutes until they are golden brown and crispy.
  6. While the potatoes bake, mix yogurt, olive oil, salt, and chopped dill in a separate bowl for dipping sauce.
  7. Once cooked, let the potatoes cool briefly before serving with the yogurt sauce.
