- 16 baby yellow potatoes
- ½ stick (4 tablespoons) melted unsalted butter
- 1.5 teaspoons garlic powder
- 1 tablespoon Italian seasoning
- 1 teaspoon salt (to taste)
- ½ cup grated Parmesan cheese
- ½ cup plain yogurt
- 1 teaspoon olive oil
- fresh dill (finely chopped, or dry dill) to taste
Instructions
- Boil the baby potatoes in a large pot of water for about 15-20 minutes until fully tender.
- Preheat your oven to 400°F (200°C) and line a sheet pan with parchment paper.
- In a mixing bowl, combine melted butter, Parmesan cheese, garlic powder, Italian seasoning, and salt.
- Transfer boiled potatoes to the baking sheet and gently smash each potato using a glass.
- Coat each smashed potato with the butter mixture and bake for approximately 30 minutes until they are golden brown and crispy.
