  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup grape or strawberry jelly (or preferred flavor)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together peanut butter, softened butter, granulated sugar, and brown sugar until light and fluffy.
  3. Add the egg and vanilla extract; mix until well combined.
  4. In another bowl, whisk together flour, baking powder, baking soda, and salt. Gradually add to the wet ingredients to form a smooth dough.
  5. Scoop about 2 tablespoons of dough, flatten into discs on the baking sheet, and place jelly in the center.
  6. Cover each disc with another flattened dough piece; press edges to seal.
  7. Bake for 12-15 minutes or until edges are golden brown. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
