  • 1 small yellow onion, chopped
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 46 garlic cloves, minced
  • 28 oz crushed tomatoes
  • 14.5 oz fire-roasted diced tomatoes
  • 3/4 cup uncooked long grain white rice
  • 6 cups low sodium beef broth
  • Fresh herbs (basil, oregano, parsley)
  • Parmesan cheese and mozzarella for garnish

Instructions

  1. In a large soup pot over medium-high heat, brown the sausage with chopped onions for about 4 minutes.
  2. Add the bell peppers, garlic, and red pepper flakes; sauté until the onions are tender.
  3. Drain excess grease and stir in crushed tomatoes, diced tomatoes, rice, broth, and herbs.
  4. Bring to a boil, then reduce heat to low and simmer for 8–12 minutes until rice is cooked.
  5. Stir in Parmesan cheese and season with salt and pepper before serving topped with mozzarella.
