Ingredients

  • 4 salmon fillets (about 6 ounces each)
  • 1 cup full-fat coconut milk
  • 1/2 cup fish stock or water
  • 1 tablespoon olive oil or butter
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 tablespoon fresh ginger, grated
  • Zest and juice of 2 limes
  • 1 tablespoon soy sauce or tamari
  • Optional: honey or maple syrup, salt and pepper to taste

Instructions

  1. In a large skillet, heat olive oil over medium heat. Sauté minced garlic and chopped onion until fragrant.
  2. Add grated ginger, then pour in coconut milk and fish stock. Mix well.
  3. Stir in lime zest, lime juice, soy sauce (or tamari), and optional sweetener. Season to taste.
  4. Carefully add salmon fillets to the sauce. Cover and simmer on low for 10-12 minutes until the salmon flakes easily with a fork.
  5. Serve the salmon drizzled with the coconut lime sauce, garnished with fresh cilantro and lime wedges.
