  • 1 1/2 cups (300 grams) brown sugar (packed)
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup (122 grams) pumpkin puree
  • 8 oz (224 grams) cream cheese (room temperature)
  • 2 tablespoons (30 grams) pumpkin puree
  • 1 ¼ cups (150 grams) powdered sugar
  • 1 teaspoon vanilla

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, baking soda, baking powder, salt, and pumpkin pie spice.
  3. In another bowl, beat melted butter and brown sugar until fluffy. Add egg, vanilla extract, and pumpkin puree; mix well.
  4. Gradually combine dry ingredients into the wet mixture until just combined.
  5. For the cheesecake filling, beat cream cheese, pumpkin puree, powdered sugar, and vanilla until smooth.
  6. Drop cookie dough onto the baking sheet and make an indentation in each cookie. Fill with cheesecake mixture.
  7. Bake for about 12 minutes or until edges are golden. Cool before serving.
