Ingredients
- 1 and ½ cups all-purpose flour
- 1 and ½ teaspoons pumpkin spice

- 1 cup canned pumpkin purée
- 2 large eggs, room temperature
- 1 teaspoon pure vanilla extract
- ½ cup vegetable oil
- ¾ cup light brown sugar, packed
- ¼ cup granulated sugar
- ⅓ cup buttermilk, room temperature
- 1 recipe of salted caramel sauce
- 1 recipe of cream cheese frosting
Instructions
- Preheat oven to 350°F (177°C) and line a cupcake pan with paper liners.
- In one bowl, mix flour, pumpkin spice, cinnamon, baking powder, baking soda, and salt.
- In another bowl, whisk together pumpkin purée, eggs, vanilla extract, oils, sugars, and buttermilk until smooth.
- Gradually combine the dry ingredients into the wet mixture until just blended.
- Fill liners about 2/3 full and bake for 16-18 minutes or until a toothpick comes out clean.
- Cool completely before frosting with cream cheese frosting and drizzling salted caramel on top.
