  • 1/4 cup milk

  • 1/2 cup granulated sugar (topping)
  • 1/2 cup brown sugar (topping)
  • 1 1/2 cups very hot water

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a medium bowl, mix the dry ingredients: flour, baking powder, salt, granulated sugar, cinnamon, and nutmeg.
  3. In a smaller bowl, combine wet ingredients: pumpkin puree, milk, melted butter (or oil), and vanilla. Mix until smooth.
  4. Stir the wet mixture into the dry ingredients until just combined.
  5. Spread the batter into an 8-inch casserole dish.
  6. In another bowl, mix topping ingredients (sugar and pecans) and sprinkle over batter.
  7. Carefully pour hot water over the top without stirring.
  8. Bake for about 40 minutes until center is set.
