  • 1 teaspoon vanilla extract
  • 2¼ cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon pumpkin pie spice
  • ½ teaspoon salt
  • 1 cup chocolate chips
  • 1 cup mini marshmallows
  • 8 graham crackers (broken into small pieces)

Instructions

  1. Preheat oven to 350°F and line a baking sheet with parchment paper.
  2. Cream together butter, brown sugar, and granulated sugar until fluffy.
  3. Mix in pumpkin puree, egg, and vanilla.
  4. In a separate bowl, whisk flour, baking soda, pumpkin pie spice, and salt.
  5. Gradually combine dry ingredients with wet mixture until just mixed.
  6. Fold in chocolate chips, mini marshmallows, and graham cracker pieces.
  7. Drop rounded tablespoons of dough onto the baking sheet with space in between.
  8. Press extra toppings into each cookie dough ball if desired.
  9. Bake for 12 to 14 minutes until edges are golden but centers remain soft.
  10. Cool on a wire rack before serving.
