  • 15.25 oz. box carrot cake mix
  • 15 oz. can pure pumpkin
  • 2 Tbsp. flour (for streusel)
  • 2 Tbsp. brown sugar (for streusel)
  • 1 tsp. granulated sugar (for streusel)
  • 1/4 tsp. cinnamon (for streusel)
  • 1.5 Tbsp. cold butter (for streusel)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Line a muffin pan with cupcake liners.
  3. In a large mixing bowl, combine the carrot cake mix and pure pumpkin until well blended.
  4. In another bowl, mix flour, brown sugar, granulated sugar, and cinnamon for the streusel topping. Cut in cold butter until crumbly.
  5. Fill each muffin liner two-thirds full with the pumpkin batter.
  6. Generously sprinkle the streusel mixture on top of each filled liner.
  7. Bake for about 20 minutes or until a toothpick inserted comes out clean.
  8. Allow to cool before serving.
