Ingredients
- 4 cups rice Chex
- 1 cup peanut butter
- 1/3 cup powdered sugar (for the mixture)

Instructions
- In a bowl, combine peanut butter and 1/3 cup powdered sugar. Microwave in intervals until melted and smooth.
- Crush rice Chex into small pieces in a large bowl.
- Mix the peanut butter mixture with the crushed cereal until well-coated. Chill for 30 minutes.
- Melt semi-sweet chocolate chips in a double boiler until smooth.
- Roll chilled cereal mixture into balls (about 1½ tablespoons each) to form truffles.
- Coat each ball in melted chocolate and place on a cookie sheet to set in the refrigerator.
- Once hardened, roll in remaining powdered sugar before serving.
