  • 2 cups cooked jasmine rice (preferably day-old)
  • 3 cups shredded cabbage
  • 1 cup sliced cucumber
  • 1 red bell pepper
  • 3 tbsp sesame oil
  • 2 tbsp peanut butter
  • 2 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp lime juice
  • 1 tbsp honey
  • 2 tsp chili crisp
  • 1/2 inch piece ginger, grated
  • Salt and pepper, to taste
  • 1 medium carrot, grated or julienned
  • 1/2 cup chopped sugar snap peas
  • 2 green onions, sliced
  • Toasted sesame seeds

Instructions

  1. Heat a non-stick skillet over medium heat. Add the cooked jasmine rice with sesame oil and soy sauce. Sauté for about 8–10 minutes until golden brown and crispy.
  2. In a large mixing bowl, whisk together sesame oil, peanut butter, soy sauce, rice vinegar, lime juice, honey, chili crisp, grated ginger, salt, and pepper until smooth.
  3. Combine the crispy rice with shredded cabbage, cucumber slices, bell pepper strips, grated carrot, sugar snap peas, green onions in the bowl with the dressing. Toss gently until well mixed.
  4. Serve in bowls topped with toasted sesame seeds.
