Ingredients
- 2 cups cooked jasmine rice (preferably day-old)
- 3 cups shredded cabbage
- 1 cup sliced cucumber
- 1 red bell pepper
- 3 tbsp sesame oil
- 2 tbsp peanut butter
- 2 tbsp soy sauce
- 2 tbsp rice vinegar
- 2 tbsp lime juice
- 1 tbsp honey
- 2 tsp chili crisp
- 1/2 inch piece ginger, grated
- Salt and pepper, to taste
- 1 medium carrot, grated or julienned
- 1/2 cup chopped sugar snap peas
- 2 green onions, sliced
- Toasted sesame seeds
Instructions
- Heat a non-stick skillet over medium heat. Add the cooked jasmine rice with sesame oil and soy sauce. Sauté for about 8–10 minutes until golden brown and crispy.
- In a large mixing bowl, whisk together sesame oil, peanut butter, soy sauce, rice vinegar, lime juice, honey, chili crisp, grated ginger, salt, and pepper until smooth.
- Combine the crispy rice with shredded cabbage, cucumber slices, bell pepper strips, grated carrot, sugar snap peas, green onions in the bowl with the dressing. Toss gently until well mixed.
- Serve in bowls topped with toasted sesame seeds.
